Some cultures call it sofrito. While it may vary slightly, this version is a unique fusion inspired by both Trinidadian and Puerto Rican flavors—a blend I’ve picked up over the years. It’s the perfect way to bring bold, authentic taste into your kitchen.


  • 3 White Large Onions

  • 1-2 Bundles of Cilantro

  • 1 bundle of Culantro

  • 10-12 Mini Sweet Peppers

  • 2 Bell Pepper

  • 2-3 Cubanelle peppers

  • 7-10 Garlic Bulbs peeled: Skip the jars! Fresh garlic makes all the difference (substitute with 1 cup pre-peeled garlic).



Customize it to your liking! Simply combine all the ingredients in a food processor (using a blender can make the mixture too soupy) and store the blend in a mason jar for later use. Pro tip: If you want to meal prep your seasoning, freeze it in ice cube trays. Each cube equals one serving. Freezing not only extends its shelf life but also makes portioning a breeze!
